Recipe Ingredients for Warm Butternut and Chickpea Salad with Tahini

2 1/2 lb butternut squash, cut into small cubes
5 T olive oil, divided
3 T tahini
3 T lemon juice
2 T water
2 cloves garlic, minced
1/2 t allspice
1/4 c cilantro, chopped
1/4 c red onion, chopped
15 oz garbanzo beans
1/2 t salt

Recipe Directions for Warm Butternut and Chickpea Salad with Tahini

  1. See blog for detailed instructions, but basically do the following.

  2. Mix squash, 2 T oil, 1 clove garlic and allspice in a bowl until well coated, spread on baking pan & roast at 425F until soft (15-20 min), allow to cool somewhat

  3. Meanwhile, whisk together tahini, lemon juice, the other 3 T of oil, water, a pinch of salt, and 1 clove garlic

  4. Finally mix everything together in a big bowl and enjoy!

  5. (PS, I've marked this gluten-free, but the tahini may or may not be, check the label)
