Recipe Ingredients for Warm Black Bean Vegetable Wraps

1 tsp olive oil
2 cloves garlic, minced
1 med. onion, chopped
1 med. zucchini, coarsely chopped
1 med. red pepper, chopped
1 tsp dried Italian seasoning
98 1/2 g black beans, 1 can drained and rinsed
1 cup shredded mozzarella cheese
1/2 cup frozen corn
1/2 tsp salt
1/4 tsp pepper
8 flour tortillas
8 tbsp sour cream
8 tbsp salsa

Recipe Directions for Warm Black Bean Vegetable Wraps

  1. Heat oil in skillet over med. heat.

  2. Saute vegetables for 5 min. then add seasoning.

  3. Cook for 1 min. or until vegetables are tender.

  4. Mash beans in a bowl.

  5. Stir in vegetables and cheese.

  6. Spoon into tortillas and roll up.

  7. Place seam side down on a baking sheet.

  8. Bake at 350F for 10-12 min.
