Green Lettuce leaf based salad, with baked Beet and mushroom, accompanied by steam asparagus and a sprinkle of seeds to taste.

Recipe Ingredients for Warm Beetroot and mushroom Salad

1 cup Lettuce
1 Spring Onion
3 Mushrooms
4 Asparagus Spears
1 Beet
15 g Pumpkin seeds
15 g Sunflower seeds

Recipe Directions for Warm Beetroot and mushroom Salad

  1. Dice Beetroot and Mushrooms. Arrange in a single layer in a baking dish lined with wax paper. Sprinkle samt and pepper to taste. Cover with aliminum foil and a bake at 180' for 20 - 30mins.

  2. Steam Asparagus until desired firmness.

  3. Chop lettuce leaf into shreds and arrange flat on a plate.

  4. Finely chop srping onion and sprinkle over lettuce.

  5. Arrange steamed asparagus on top of lettuce.

  6. Place baked Mushrooms and beet over the whole salad decoratively.

  7. Sprinkle seeds all over.

  8. Add Low Fat Ranch Dressing, or Lemon Vinergerette to taste.

  9. Salt and Pepper to taste
