Recipe Ingredients for Warm Beet Salad

3 beets
1 c. sliced red onion
1/2 T. olive oil
1/8 c. white vinegar
1 tsp. cumin
1/8 tsp. cinnamon
1 T. balsamic vinegar
1/2 T. cilantro
1/16 c. (1 T.) brown sugar

Recipe Directions for Warm Beet Salad

  1. Trim beet stalks, cover with water, and simmer, covered, 1 hour. Cool, peel and slice thinly.

  2. In saucepan large enough to hold the beets, saute the sliced onion in the oil until softened.

  3. Add the vinegar, cumin, and cinnamon, and cook for 2 min. Add the brown sugar, cover, and cook 2 min. longer.

  4. Add sliced beets to cooked onions. Add balsamic vinegar, chopped cilantro, freshly ground pepper and salt, to taste. Cover and simmer 5 min.
