A delicious spring treat. The beets provide all the sweetness you'll need, and all of the ingredients can be found in season at the same time of year. Best of all, it's packed with vitamins and nutrients.

Recipe Ingredients for Warm Beet and Goat Cheese Salad

3 oz goat cheese
2 large tomatoes, sliced and then halved
4 beets
2 heads bibb lettuce
1 large cucumber
4 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp white wine vinegar

Recipe Directions for Warm Beet and Goat Cheese Salad

  1. 1. Preheat oven to 425F. Peel beets and cut into 8 segments, discarding the tops. Arrange these on a baking sheet.

  2. 2. In a small bowl, combine 2 tbsp olive oil with 1 tbsp white wine vinegar. Mix thoroughly, then brush over beets. Pour any of the remaining mixture directly over the beets. Place beets in oven and roast for 30-40 minutes, until caramelized, turning the beets over halfway through.

  3. 3. While the beats are roasting, cut the lettuce into manageable segments (no more than 2 inches in length) and toss together with cucumbers.

  4. 4. Once the beats are caramelized, remove from oven and let cool for 5 minutes. Once cool, add to salad and toss.

  5. 5. Mix remaining olive oil and balsamic vinegar into a vinaigrette, then add to salad. Toss thoroughly.

  6. 6. Add small chunks of goat cheese to the top, toss again, and serve.
