Recipe Ingredients for Warm Beef Salad

2 tbsp olive oil
1 lb steak
1/4 tsp salt
1/4 tsp pepper
1 1/2 cups sliced red onion
2 cloves garlic, minced
1/2 tsp dried rosemary
1 tbsp vinegar
2 tsp dijon mustard
1/4 tsp granulated sugar
6 cups spinach

Recipe Directions for Warm Beef Salad

  1. In nonstick skillet, heat half of the oil over medium-high heat. Sprinkle both sides of steak with pinch each of the salt and pepper; cook steak for about 4 minutes per side for medium or to desired doneness. Remove to plate; tent with foil and let stand for 5 minutes before slicing thinly across the grain.

  2. Add onion, garlic, rosemary and remaining salt and pepper to pan; cook over medium heat, stirring occasionally, for 4 minutes or until onion is softened.

  3. Meanwhile, in serving bowl, whisk together remaining oil, vinegar, mustard and sugar. Add onion mixture and spinach; toss to coat. Arrange slices of steak over top.
