Recipe Ingredients for Warm Apple-Walnut Wheat Berr􀁜 Salad

1 cup(s) uncooked wheat berries
3 1/2 cups water
1/2 tsp salt
1/3 cup cranberries, frozen
2 tbsp unsweetened orange juice
2 tbsp uncooked shallots, minced
1 tbsp olive oil
1 1/2 tsp sugar
1 tsp thyme, fresh, chopped
1/4 tsp table salt, or to taste
1/8 tsp black pepper, ground
2 medium [11143] stalk,+medium+7-1/2"+-+8"+long ribs uncooked celery
1 medium Granny Smith apples, chopped small
1/4 cups chopped walnuts, toasted

Recipe Directions for Warm Apple-Walnut Wheat Berr􀁜 Salad

  1. In a medium sauce pan, combine wheat berries, water and 1/2 teaspoon salt; bring to a boil over high heat. Reduce to a simmer, cover and cook

  2. until wheat berries are tender but retain some chew, about 1 hour.

  3. Meanwhile, puree cranberries, orange juice, shallot, oil, sugar, thyme, salt and pepper in a blender.

  4. When wheat berries are done, drain and return to saucepan. Stir in cranberry dressing, celery, apple and walnuts.

  5. Yields about 3/4 cup per

  6. serving.
