Recipe Ingredients for Warm Apple & Lentil Salad

1 cup lentils
1 medium onion
2 cloves garlic
1 t dried thyme
2 medium granny smith apples
4 stalks celery
2 T cider vinegar
1 T dijon mustard
1 1/2 c chicken broth

Recipe Directions for Warm Apple & Lentil Salad

  1. Place the lentils in a pot with 3 cups of water, the onion, thyme, salt and pepper. Bring to a boil, then simmer, covered, until lentils are softened.

  2. Add the rest of the ingredients and simmer until apples and celery are softened and liquid is mostly absorbed.
