Recipe Ingredients for Walter's Beef Florentine

2 pounds of lean ground beef
4 cups canned, drained spinach
1 large onion, finely chopped
1/2 pound fresh mushrooms
2 cloves garlic, minced
2 tsps oregano leaves
4 tbsps flour (almond is best)
2 tsps salt
1/2 tsp pepper
1 1/2 cups beef broth
1 pint sour cream
1 cup feta cheese, crumbled
1 cup Monterey Jack cheese, shredded
2 tbsp vegetable oil

Recipe Directions for Walter's Beef Florentine

  1. Brown ground beef, onion, mushrooms, garlic, salt, pepper and oregano in the vegetable oil.

  2. Quick, like making gravy, stir in the almond flour, then add the beef broth and stir until thickened. Fold in sour cream, then spinach, then feta.

  3. Spread in large rectangle cassarole (13x9). Top with with Monterey Jack.

  4. Bake at 350 degrees F, for aproximately 45 minutes.

  5. Enjoy!
