original recipe calls for pecan meal but notes walnuts maybe a substitute. change ww flour from 1 cup to 2 1/2 cups and bread flour to 1 cup. due to the dry texture of ww increasing water to 10 oz and adding 2oz egg whites. optional to brush with butter when hot does increase calories

Recipe Ingredients for Walnut Wheat Bread

2 1/2 tsp instant yeast
10 oz water
6 tblsp water
1/4 cup dark brown sugar
2 tblsp butter
2 1/2 cups whole wheat flour
1 cup bread flour
1 1/4 tsp salt
1/2 cup chopped walnuts
2 oz egg whites
2 tsp butter

Recipe Directions for Walnut Wheat Bread

  1. combine all ingredients in a medium size bowl. mix until the dough forms a shaggy mess and begins to pull away from the bowl sides.

  2. knead the dough by hand for 10 minutes till it becomes smooth. transfer to a lighly oiled bowl, turning to coat all sides, cover the bowl and allow to rest for 1 hour for dough to rise.

  3. transfer to a lightly oiled work surface, shape into a log and place in a lightly greased 8 1/2 x 4 1/2 or 9x5 loaf pan.

  4. tent the dough with lightly greased plastic wrap and allow it to rise till its crowned about 1" meaning rest another 45minutes

  5. bake at 350 degrees for 35-40 minutes

  6. tent with alum foil for the last 15 minutes interior should register 190 degrees, while hot brush with butter to keep the crust soft and nice shine
