15 1/2 oz White Beans, canned, Drained and Rinsed
2 Eggs
1 cup Splenda
1 tsp Baking Powder
1/2 tsp Baking Soda
2 tsp Cinnamon
1 tsp Nutmeg
2/3 cup Fat Free Milk, powder
1 tbs Vanilla
3 tbs Light Margarine (I use I Can't beleave it not butter Lt)
1/4 cup Fat Free Ricotta
1/2 cup Walnuts

Recipe Directions for Walnut and Spice White Bean Muffins

  1. How to make Walnut Spice White Bean Muffins

  2. Preheat Oven to 350

  3. In a Blender, Blend the Beans and eggs.

  4. Combine with all the other Ingredients in a mixing Bowl, don't over mix though

  5. Pour in to greased Muffin Tins or paper muffin cups

  6. Bake for 40 minutes at 350
