This is a simple but rich dessert that complements fruit salad, poached fruit, or a bunch of grapes.

Recipe Ingredients for Walnut Shortbread

1 cup butter
1 cup spelt flour
1/2 cup oat flour
1/2 cup walnuts
1/2 cup Splenda
1 pinch of salt

Recipe Directions for Walnut Shortbread

  1. Preheat oven to 350 degrees F. In large mixing bowl, cream butter. Add flour, walnuts, sugar, and salt and stir unitl blended.

  2. The dough will be very stiff. Press dough firmly with your fingers into ungreased 9X9 inch-pan. Prick entire surface at 1/2 inch intervals with a fork to let out steam during cooking. Bake 25 minutes, or just until golden. Remove from oven, allow to cool a few minutes, then cut into squares or narrow rectangles. If you make this in a pie dish of approximately the same square-inch measurement, cut into triangles.

  3. Makes 12 pieces.
