Spicy chili using lots of veggies. Makes a large quantity that can be frozen.

Recipe Ingredients for Walnut and pecan chili

300 g kidney beans
489 g onion
564 g broccoli
750 g mushroom
356 g carrot
15 g hot pepper
272 g celery
310 g green pepper
468 g courgette
66 g pecans
200 g walnuts
5 tbsp chili powder
1 tbsp cumin
10 g garlic granules

Recipe Directions for Walnut and pecan chili

  1. Soak the kidney beans overnight or boil for an hour or two; discard the water.

  2. Heat the mushrooms

  3. 'Saute' the onions in the juice released from the mushrooms

  4. Add the other vegetables little by little, starting with the tougher veg (carrot and celery) and ending with the more delicate veg (courgette)

  5. When the mushroom juice is no longer enough, begin adding water occasionally

  6. Add nuts and spices halfway through the cooking

  7. Let simmer as long as you like
