Recipe Ingredients for Walnut Mushroom Whole Wheat Raviloi

250 grams Mushrooms
145 grams White Onion
0.25 cup Spinach
4 grams Cilantro
1 tbsp Extra Virgin Olive Oil
0.33 tbsp Toasted Sesame Oil
55 grams Chopped Walnuts
1 cup Organic Whole Wheat Flour
1 large Egg, Whole
0.5 cup Pesto with Basil
120 grams Sour Cream
1/4 tsp Sea Salt
0.25 tsp Garlic Powder
1 dash Pepper, Black

Recipe Directions for Walnut Mushroom Whole Wheat Raviloi

  1. Whole Wheat Pasta

  2. Place flour in bowl make a well and add the egg and water into the well, lightly toss the water and egg together until blended, then stir the flour into the liquid until it forms a ball. Knead the dough about 20 times and set aside while you make the filling.

  3. Ravioli Filling

  4. Sauté onions till caramelized set aside

  5. Wilt the spinach until it is dark green and completely cooked, when cooled lay on a chopping block and coarsely chop, set aside

  6. Chop Cilantro and set aside

  7. Finely chop the walnuts and set aside.

  8. Sauté Mushrooms until reduced in size and fully cooked, add the onions, cilantro, spinach and walnuts. Add the salt, pepper and garlic powder to taste.

  9. When the filling is complete create your sheet of pasta my running the dough thru a pasta maker until it passes thru the #3 setting. You dough is now the width it should be. Cut the dough to form even squares. The Raviolis (when folded) will be triangle shape. The dough should make about 8-10 squares.

  10. On an angle put a ?heaping? tablespoon of filling into the middle of the down, wet the triangle edge of the dough and fold over to form a filled triangle shaped ravioli.

  11. Set aside and let rest while you bring a large sauce pan of salted water to a boil. Place Raviolis into boiling water and boil about 10 mins.

  12. Place 1 ravioli on a place and spoon on two table spoons of sauce.
