Stuff-in-your-face vegan holiday dish

Recipe Ingredients for Walnut mushroom stuffing

4 slices whole-grain bread, diced
1/2 t Italian seasoning
1/4 t sea salt
1 t canola oil
1/2 onion, chopped
1 clove garlic
1 c mushrooms, diced
1 t soy sauce
2 T vegan margarine
1/2 c vegetable broth
1/2 c walnuts, chopped

Recipe Directions for Walnut mushroom stuffing

  1. Preheat oven to 280 C.

  2. In a medium bowl, combine bread, italian seasoning and salt. Toss.

  3. Heat oil in a large skillet. Add onion and cook until translucent, adding garlic for last few minutes.

  4. Add mushrooms and soy sauce and cook until mushrooms are tender.

  5. Melt margarine in microwave and toss with bread, mushroom mixture and walnuts.

  6. Add 1/4 c of broth and stir gently. Add remaining broth until mixture is moist.

  7. Season and transfer into a pan.

  8. Bake for 40-45 minutes, or until lightly golden.
