This is very tasty and elegant-looking, although a little messy to eat. I recommend using the puff pastry shells if you want to use as an appetizer. Adapted from http://lucullian.blogspot.com/2007/01/ginger-walnut-and-brussels-sprout.html

Recipe Ingredients for Walnut, Ginger, and Brussels Sprout Puffs

2 cups Brussels sprouts, shredded
2 tbsp Ginger root, finely chopped
1/2 cup Walnuts, chopped
1 pinch Salt
1 tbsp Olive Oil
8 1/2 oz Puff Pastry, thawed, A sheet

Recipe Directions for Walnut, Ginger, and Brussels Sprout Puffs

  1. Preheat oven to 350F

  2. Trim and shred the Brussels sprouts quite finely.

  3. Heat oil in a medium saucepan until hot. Add Brussels sprouts and 1/4 cup water. Braise until soft, about 5-10 minutes.

  4. Peel and chop the fresh ginger very finely.

  5. Add to braised sprouts when they're done and remove from heat.

  6. Stir in the chopped walnuts.

  7. Spread out the Brussels sprouts on a rectangle of puff pastry, leave 1 inch at one of the longer ends and start rolling from the other. Close it by moistening the clean end and pressing against the roll.

  8. Cut the roll into thick slices and bake these in the oven for about 10-15 minutes or until they look ready!
