very light It made 20 cookies and only took 20 minutes to bake.

Recipe Ingredients for Walnut Cookies

1 stick butter
1/4 cup sugar
1 cup walnuts, finely chopped
1 cup spelt flour
2 tbsp confectioners' sugar

Recipe Directions for Walnut Cookies

  1. Preheat oven to 350 F. butter cookie sheets. In a mixing bowl, cream butter and sugar. Add nuts and flour adn stir to combine. Drop by teaspoonfuls about 2 inches apart onto prepared cookie sheets.

  2. Bake approximately 25 minutes. Keep a careful watch after the first 20 minutes to make sure that thecookies don't get darker than golden. You want them to be golden borwn. With spatula immediately remove from pans and cool on wire rack. Sprinkle lightly with sugar.

  3. Makes 20 to 30 cookies.
