Recipe Ingredients for walnut cookies

1 1/2 cups walnut meal
2 eggs
1/2 cup sugar
1 tablespoon ground cardamom
1/2 teaspoon baking soda
1 tablespoon rose water
1/4 cup pistachio nuts, chopped (optional)

Recipe Directions for walnut cookies

  1. Preheat the oven to 350 degrees F. In a medium bowl, mix together the ground walnuts, 2 eggs, sugar, cardamom, baking soda and rose water until well blended. By teaspoonfuls place onto parchment-lined baking sheets--the batter will be liquidy. Cookies should be spaced 2 inches apart. Sprinkle each cookie with a few pieces pistachio nuts.

  2. Bake for 12-15 minutes in the preheated oven. Although the cookies may look soft and under baked, they will harden considerably when cooled. Allow them to cool on the baking sheets for at least 10 minutes before taking off with a very thin spatula.

  3. Bake on a large cookie sheet 24 at a time.
