These rich, not too sweet cookies are delicious with a piece of ripe fruit.

Recipe Ingredients for Walnut Cookies

1 stick butter
1/4 cup sugar
1 cup walnuts, finely chopped
1 cup spelt flour
1/8 cup powdered sugar

Recipe Directions for Walnut Cookies

  1. Preheat oven to 350 degrees. Lightly spray cookie sheets with non stick spray.

  2. In a bowl, cream butter and sugar. Add nuts and flour, stirring to combine. Drop by teaspoonfuls 2 inches apart on onto prepared cookie sheets. Bake for about 25 minutes, watching carefully after 20 minutes so they don't get darker than golden brown. Immediately remove to wire rack and cool. Sprinkle lightly with powdered sugar.
