This fiber-rich spread is the perfect base for a fast weekday lunch but can also be served as a stand alone dip with cup-up vegetables or toasted pita chips.

Recipe Ingredients for Walnut Cannellini Wraps

30 grams Walnut Halves
15 oz Cannellini Beans
0.25 cup Parsley
1 lemon yields Lemon Juice
2 tbsp Olive Oil
1 clove Garlic
1/4 tsp Salt
1 tbsp Pepper, Black
4 tortilla Tortillas
1 carrot (7-1/2") Carrots

Recipe Directions for Walnut Cannellini Wraps

  1. Combine everything except argula and carrot in the bowl of a food processor.

  2. Process mix until smooth and creamy.

  3. Spread the mixture evenly over each of the tortillas.

  4. Layer the tortillas with the carrot and arugula.

  5. You can cut them in half and serve as appetizers, or eat the whole thing as a lunch/sandwich.
