1 oz Yeast
250 mL Milk 1.5%
450 grams Wheat Flour, White, All-purpose, Unenriched
3 tsp Sugars, Granulated
1 tsp Lemon Peel
0.625 cup, ground Walnuts, English
28 grams Egg, Yolk
0.13 tsp Sea Salt

Recipe Directions for Walnut brioche

Heat milk until warm, add 1 tbsp of sugar and crumb in yeast. Leave to stand for 5-10 minutes. In a bowl, mix flour, walnut, 2 tbsp sugar and lemon peel. Make a hole in the centre, pour in a yeast and milk, and add egg yolks. Add a pinch of salt, but do not let it touch directly the yeast. Knead the dough for 10-15 minutes. Leaven it to double-size. Pre-heat the oven to 180 C. Make small balls of the dough (20 pieces, but you can make up to 35, if you like them smaller), and put them in a baking tin lined with baking sheet. They can be put right next to each other. For the best result, make steam in the oven while baking (for example, put a small bowl of water into the oven or pour in some water, if you have an electric one). Grease the top of the balls with a little milk. Bake them for about 30 minutes. If they look too brown, reduce heat, or cover the tin with tinfoil. Do not open oven door during the first 15-20 minutes.
