Basic Waffles from Mark Bittman's How to Cook Everything Vegetarian (with a few variations)

Recipe Ingredients for Walnut, Apricot, Plum Waffles

1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
0.13 cup Turbinado Sugar
1.5 cup FAGE Total 0%
6 fl oz Vanilla
4 large Egg, White
65 grams Organic Apricots
65 grams Dried Plums
50 grams Walnut Pieces

Recipe Directions for Walnut, Apricot, Plum Waffles

Combine 2 c. flour, 1/2 tsp salt, 2 TBSP sugar, 1.5 tsp baking soda (or 1.5 TBSP to make them really light). Mix well. Separately combine 1.5 c. greek yogurt, 3/4 c. almond milk, 1/2 c. water, 1/2 tsp vanilla, and 4 egg whites. Add in 65g chopped dried apricots, 65g chopped dried plums, and 50g chopped walnuts.
