A crisp, refreshing summer salad

Recipe Ingredients for Walnut, Apple & Wild Rice Salad

2 granny smith apples, cored & diced
2 c walnuts, coarsely chopped & toasted
2 c raisins
8 green onions, thinly sliced
2 celery stalks, thinly sliced
6 tbsp lemon zest
6 tbsp lemon juice
1 tsp salt
1 tsp black pepper
4 cloves garlic, pressed
2/3 c olive oil
9 cups wild rice, cooked

Recipe Directions for Walnut, Apple & Wild Rice Salad

  1. In a large bowl combine apple, walnuts, raisins, green onion, celery & lemon zest.

  2. In a small bowl mix lemon juice, salt, pepper, garlic and oil. Whisk thoroughly and pour half of it over the apple mixture.

  3. Combine the apple mixture and rice in the large bowl and toss with the remaining lemon dressing.
