Wally's Mexican Rice Recipe

Healthier version of my classic dish.

Recipe Ingredients for Wally's Mexican Rice

2 tbsp olive oil
1/4 cup diced onion
1 clove garlic, minced
1 cup brown rice
1 tsp. chili powder
1/2 tsp cumin
1/4 tsp curry powder
1/2 tsp salt
2 cups low sodium chicken broth

Recipe Directions for Wally's Mexican Rice

  1. Heat olive oil in skillet

  2. Add rice & onion, stir, browning rice, lightly

  3. Add garlic cook to remove raw taste. Do not brown garlic.

  4. Add chili powder, cumin, curry, and salt. Stir & cook for 2-3 minutes.

  5. Add chicken broth & bring to boil.

  6. Turn heat to low & cook for 45 minutes.

  7. Let rest, off heat,for 7 minutes.

  8. Serve.
