Light and fluffy! Makes 10 - 4 x 4.5 inch waffles.

Recipe Ingredients for Waffles

2 eggs, divided
1 3/4 cup milk
1/2 cup vegetable oil
1 3/4 cup flour
1 T baking powder
1/2 tsp. salt

Recipe Directions for Waffles

  1. In small mixing bowl, beat egg whites until stiff peaks form. Set aside.

  2. In large mixing bowl, beat egg yolks with fork. Beat in milk and oil. Add flour, baking powder and salt. Stir until blended but still slightly lumpy.

  3. Carefully fold in egg whites - leave a few fluffs of egg white. Do not overmix.

  4. Lightly grease the waffle baker. Pour batter onto preheated baker. Close lid quickly, do not open during baking. Remove waffle with a fork.
