Waffles Recipe

Makes 4 servings



These waffles replace most of the oil with yogurt and milk.

Recipe Ingredients for Waffles

1 cup whole wheat pastry flour
1 tbs sugar
1 egg
1 tbs canola oil
1/2 tsp vanilla extract
1/2 tsp almond extract
6 oz flavored yogurt (suggestion: maple flavored yogurt by Wallaby)
1/2 cup low fat milk
1 dash of cinnamon
1 tsp baking powder

Recipe Directions for Waffles

Preheat waffle iron to desired setting. Combine all dry ingredients in a mixing bowl. Beat egg slightly; stir in yogurt, oil, milk and extracts. Add egg mixture to dry ingredients. Stir until moistened. Batter should be slightly lumpy. Add milk if batter needs more moisture. Pour 1 to 1 1/4 cups of batter onto grids of waffle maker. Bake according to manufacturers directions. Repeat process, keeping the first waffle warm. Cut waffles into four equal portions (you will have 8 total; serve each person 2 waffles). Freezable. Serve with fresh fruit or maple syrup.
