Makes 11 servings



No eggs and low carb but very moist chocolatey cake. I made these into 11 cupcakes, but you can make it an 8x8 square as well.

Recipe Ingredients for Wacky Cake

1 1/2 cups flour
1 cup splenda no calorie sweetener
3 tablespoons cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon vinegar
5 tablespoons canola oil
1 cup water

Recipe Directions for Wacky Cake

  1. In a large mixing bowl, mix flour, sugar, cocoa, soda and salt.

  2. Make three wells in the flour mixture.

  3. Into the wells separately, put the vanilla, vinegar and oil.

  4. Pour the cold water over all and mix until well incorporated.

  5. Pour into (Pam) sprayed cupcake pans or into an 8x8 square..

  6. Bake at 350 for 25-30 minutes or a little less for cupcakes.
