Recipe Ingredients for vodka risotto base

75 g risotto rice
300 ml stock, vegetable
1 oz butter
2 oz yoghurt
1 tsp lime juice
1 tsp vodka

Recipe Directions for vodka risotto base

  1. Cook quorn in butter for 5 minutes

  2. Add lime juice and vodka

  3. Add rice to pan and stir for 1 minute

  4. Add stock

  5. Bring to boil and put in covered oven dish

  6. Bake at 150C for 25 minutes

  7. Stir in yoghurt

  8. Bake for another ten minutes
