Can use the juice from boiled ham and chopped ham instead of bacon. Can use maple syrup instead of molasses. Some people add catsup or tomatoes.

2 pounds great northern beans
1 tablespoon salt
1/2 cup molasses
1 cup brown sugar
1 pound bacon
1 medium onion
1/2 teaspoon baking soda

Recipe Directions for Virginia Oesterreich's baked beans from Rosemary Plautz

Soak beans overnight and cook in the same water in the morning, bringing water to a boil, then add the baking soda and drain off the water. Add fresh cold water and boil for 15 minutes. Fry the bacon and cut itnt small pieces- put in the roaster pan and add the remaining ingredients. Stir in the beans, mixing well. Bake at 350F for 1 hour, checking to see if more water is needed. These freeze well.
