Recipe Ingredients for Violet's 1st Bday Cake - Sugar Free Banana/Apple

2 cup Whole Wheat Flour
0.5 cup Original Soy Milk
1 tsp Baking Soda
1 tsp Cinnamon, Ground
1 cup Apple Sauce Unsweetened Organics

Recipe Directions for Violet's 1st Bday Cake - Sugar Free Banana/Apple

  1. 8 oz (2 cups) whole wheat flour

  2. 1 tbsp wheat germ (optional)

  3. 1 heaped tsp baking soda

  4. 1 tsp cinnamon (optional)

  5. 6 medium, ripe bananas - mashed

  6. 8 fl oz (1 cup) sugar-free applesauce

  7. 2-4 fl oz (1/4 to 1/2 cup) soy milk

  8. Preheat the oven to 325 deg F (160 deg C).

  9. In a bowl, combine the flour, wheat germ, baking soda and cinnamon.

  10. In a separate bowl, combine the applesauce with the mashed bananas and 1/4 cup milk.

  11. Pour the applesauce mixture into the bowl with the dry ingredients and mix thoroughly. If the mixture seems dry, you can add up to another 1/4 cup milk.

  12. Pour into a greased 9" x 9" square or 9" round pan and bake for around 1 to 1 1/2 hours. The cake is ready when a sharp knife inserted into the middle comes out clean.

  15. Cream Cheese Frosting with Maple Syrup

  16. 8 oz (1 cup) cream cheese

  17. 4 oz (1/2 cup) pure maple syrup

  18. About 1/2 an hour before you start, take the cream cheese out of the refrigerator to bring it closer to room temperature.

  19. Whisk the cream cheese until light, then add the maple syrup and continue to whisk until mixed thoroughly.

  20. Frost your cake as soon as it's cool.
