Recipe Ingredients for Vindaloo Vegetables

1 tbsp canola oil
1 medium onion, chopped
3 tsp garlic, minced
1 tbsp ginger, minced
2 tsp garam masala
1 tsp brown sugar
1/2 tsp paprika
6 oz carrot
6 oz peas
1 medium potato, diced
12 oz cauliflower
2 jalapenos
14 1/2 oz tomatoes, diced
1 tbsp vinegar
1 1/2 cups water
1 1/2 cups chick peas
1 tsp salt
1/2 cayenne

Recipe Directions for Vindaloo Vegetables

  1. Heat oil. Add onion, garlic, ginger, the spices, and sugar. Cook for 5 minutes, stirring.

  2. Add all vegetables except for the peas.

  3. Stir in the vinegar and water and season to taste with salt and pepper.

  4. Bring to a boil, reduce heat to medium, simmer twenty minutes.

  5. Add beans and peas. Cook another 10 minutes.
