Recipe Ingredients for Vij's Simple Masala

1/6 cup canola oil
1 1/2 cups finely chopped onion
2 tbsp chopped garlic
3 cups chopped tomatoes
1/2 tsp turmeric
2 tsp ground cumin
1 1/2 tsp ground coriander
1/2 tsp salt
1 tsp cayenne
14 oz can chickpeas
1 1/2 cup water
5 1/2 oz chopped red pepper
7 1/2 oz chopped zucchini
3 1/2 oz sliced crimini mushrooms

Recipe Directions for Vij's Simple Masala

  1. Heat oil in a heavy bottomed pot on high heat.

  2. Add onions and saute until golden brown, ~5 minutes.

  3. Add garlic and saute until browned, ~2 more minutes.

  4. Stir in tomatoes, then add turmeric, cumin, coriander, salt and cayenne.

  5. Turn down heat to medium and saute, stirring regularly, until oil seperates from this masala mixture.

  6. Add chickpeas, vegetables and enough water to make the curry the consistency you prefer.

  7. Stir well cover and brng to a boil.

  8. Reduce the heat to low and simmer for about 5 minutes.
