Use 10 rice paper wrappers NOT 3 spring roll wrappers. The adjustment is to make calories per roll match the Weight Watcher's Cookbook.

Recipe Ingredients for Vietnamese Summer Rolls

6 oz rice vermicelli
10 shrimp
1 large carrot
3/4 t salt
2 c bean sprouts
3 1/2 T lemon juice
1 1/2 T sugar
1 c water
3 spring roll wrapper
1/3 c cilantro

Recipe Directions for Vietnamese Summer Rolls

  1. Cook the vermicelli in a large pot of boiling water until just tender, 1-2 mins. Drain and rinse with cold water then drain again. Refill the pot with water and bring to a boil. Add shrimp and cook until opaque in the center, about 2 mins.

  2. Toss the carrots with 1/2 t salt in a med. bowl and let stand 10 mins. Drain off any liquid. Ad the noodles, bean sprouts, lemon juice, 1 1/2 t sugar and remaining 1/4 t salt; toss.

  3. Assemble the rolls by combining the remaining 1 T sugar with warm water in a large shallow bowl or pic plate and dissolve. Moisten 1 wrapper in the sugar water and placeit on a clean kitchen towel. Place about 1/2 C of the noodle mixture, 2 shrimp halves, and a few cilantro leaves in the center. Fold in each end of the wrapper and roll to completely enclose the filling. Repeat to make 10 rolls, rewarming the sugar water if necessary. Serve each roll sliced in half with some dipping sauce.
