Vienamese soup customized for our family. The lime and slap ya mama are on the side as optional additions to the soup after it is served.

Recipe Ingredients for Vietnamese Soup

2 oz Rice Noodles, Dry
1/2 cup pieces Mushrooms
2 oz Fresh Boneless Skinless Chicken Breasts
1 cup (8 fl oz) Soup, Chicken Broth Cubes
3 grams Garlic

Recipe Directions for Vietnamese Soup

  1. Dice the chicken cutting off any excess fat.

  2. Press the garlic and mix with the diced chicken in a soup pot.

  3. Cook the chicken and garlic with lots of stirring to seal in the juices.

  4. Add bullion by using the 1 cup per person. Think more if people might want seconds.

  5. Add 1-2 cinnamon sticks

  6. Add 1tsp. of coriander seds in a tea ball ( don't let them loose in the soup)

  7. Add fresh sliced or diced mushrooms.

  8. Add diagonal sliced green onions

  9. Add rice noodles

  10. Add chopped cilantro

  11. Add 1-2 fresh basil leaves

  12. When the noodles are cooked the soup is ready to be served.

  13. Have fresh limes and tabasco or slap ya mama on the side for added flavor.
