Hoanh Thanh with noodles, not wontons. eggplants, no meat

Recipe Ingredients for Vietnamese Soup

1 1/2 liters water
4 bouillon cubes
1 cup eggplant, fried
16 oz mushrooms
1/4 cup onions, fried
1 tablespoon garlic, fried
2 tablespoon green onion, chopped
2 cups rice noodles
2 tablespoons oil

Recipe Directions for Vietnamese Soup

  1. sautee onions and garlic in oil till soft

  2. use one buillion and 2 tablespoons water to marinade eggplant, stove cook til brown.

  3. boil water with remaining bouillon cubes

  4. add noodles, turn off heat, wait til soft.

  5. add onions, garlic, eggplant, mushrooms, cook until noodles complete.

  6. add green onions.
