Sweet, crunchy, garlicky, and sour. A great foil for flavorful meats in sandwiches! This is a quick pickle - they can be eaten in as soon as 30 minutes.

Recipe Ingredients for Vietnamese pickles for Bahn Mi

2 carrots
2 pickling cucumbers
1 cp vinegar
1 T sugar
2 cloves garlic
1/4 t salt

Recipe Directions for Vietnamese pickles for Bahn Mi

  1. Cut carrots and cucumbers into sticks, slice garlic.

  2. Combine vinegar, sugar, garlic, and salt. Microwave for 20 seconds to melt sugar and bring out the garlic flavor.

  3. Place carrot and cuke sticks into a glass jar, pour vinegar mixture over and let sit for 30 minute to an hour. Keeps for about a week.

  4. Great for Bahn Mi Sandwiches!
