Fast and easy Asian version of a classic that's super tasty and filling.

Recipe Ingredients for Vietnamese Chicken Rice Soup

1 lb. chicken breasts (2)
10 c. water
1 c. white rice
1 onion, diced
1 T. fish sauce
2 t. white sugar
1 salt and pepper to taste
1 green onion, cilantro, shallots, hot peppers, sriracha to taste/garnish

Recipe Directions for Vietnamese Chicken Rice Soup

  1. In largish pot, bring water to a boil. Add chicken. (Chicken can be completely frozen or thawed.) Boil until chicken is just cooked (20 minutes for thawed, about 30 for frozen), then take out.

  2. Add rice, onion, fish sauce, sugar, salt and pepper to pot. Stir occasionally. Boil until rice is just done, then simmer. Meanwhile, shred cooked chicken breasts. Add back into pot when rice grains are starting to split. (Add more water if needed but soup should be thickish.) Heat through. Or boil if you took the chicken out a little early and it needs to cook a bit more.

  3. Serve in bowls topped with herbs. Six servings is for pretty big bowls. This could probably make eight smaller servings for less calories and still be a decent meal. Make sure sriracha is handy. A squeeze of lime can really brighten it up, too!
