Vietnamese Beef Soup Recipe

One year, my oldest sister gave me the "Thai Cooking and More" cookbook. In it, I found this recipe. I fell in love with it instantly! Now I always have several servings of it in the freezer for days when I don't feel like cooking dinner. When you're done cooking it, it should be thick enough to stand a spoon in! (Add 1 cinnamon stick to the pot while preparing the broth. Remove it before adding the beef.)

Recipe Ingredients for Vietnamese beef soup

3/4 pounds boneless beef top sirloin or top round steak
3 cups water
1 can beef broth
1 can beef consomme
2 tbsp soy sauce
2 tbsp minced fresh ginger
4 ounces rice noodle
1/2 cup carrots
2 cups fresh bean sprouts
1 small red onion, halved and thinly sliced
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh basil
2 jalapeno peppers, minced

Recipe Directions for Vietnamese beef soup

  1. Place beef in freezer 45 minutes or until firm (makes it easier to slice).

  2. Meanwhile, combine water, beef broth, consomme, soy sauce, ginger, cinnamon stick (Calorie count couldn't analyze the cinnamon stick, so I left it out) in large saucepan; bring to a boil over high heat. Reduce to low; simmer, covered, 20 to 30 minutes.

  3. Remove cinnamon stick; discard. Meanwhile, place rice noodles in large bowl and cover with warm water; let stand until softened, about 20 minutes.

  4. Slice beef lengthwise in half, then crosswise into very thin strips. Drain noodles. Place noodles an carrots in simmering broth; cook 2 to 3 minutes or until noodles are tender. Add beef and bean sprouts; cook 1 minutes or until beef is no longer pink.

  5. Remove from heat; stir in red onion, cilantro, basil, and jalapeno peppers. To serve, lift noodles from soup with form and place in bowls. Ladle remaining ingredients and broth over noodles.
