Recipe Ingredients for Vienna Bread

1 1/4 c water
3 c flour
1 1/2 tsp salt
1 1/2 tsp sugar
1 T oil
3 T powdered milk
2 1/2 tsp yeast

Recipe Directions for Vienna Bread

  1. Place ingredients in bread machine in order given. Set bread machine for mixing and first rise. If using mixer with dough hook, heat water to 110 degrees and add yeast to bloom for 10 minutes. Add remaining ingredients to mixer and mix with dough hook for 7 to 10 minutes, until dough is smooth and pulls away from sides of bowl. Cover and let rise until doubled.

  2. When dough has completed the first rise, generously flour a work surface and pour dough out onto surface. Using your knuckles, gently deflate the dough and press out into a rectangular form, then gently roll up and tuck ends under so that loaf fits into greased loaf pan. Or shape into long free-style loaf that does not require a loaf pan, and place on cookie sheet. Make slits on top of free-style loaf for an appealing appearance.

  3. Let raise again -- approx. 45 minutes.

  4. Preheat oven to 375

  5. Bake for approximately 35 minutes.

  6. If using the bread machine for baking-- use the light setting.
