Recipe Ingredients for Vidalia Onion Pie

20 crackers, crushed
1/4 cup butter
2 cups sweet onion, thinly sliced
1/2 cup Egg Beaters
3/4 cup skim milk
3/4 teaspoon salt
1/4 cup fat free sharp cheddar cheese

Recipe Directions for Vidalia Onion Pie

Mix cracker crumbs with 1/4 cup melted butter. Press into 8-inch pie plate. Saute onions in 2 T of butter (from the 1/4 cup), until translucent, not brown. Spoon into crust. Mix eggs with milk, salt and pepper (dash of pepper). Pour this mixture over onions, sprinkle with cheese and paprika, bake at 350 degrees for 30 minutes.
