Recipe Ingredients for Victoria's Weeknight Greek Pasta

4 cup Cooked and drained(Brown Rice) Spaghetti
6 clove Garlic Minced
1 1/2 tbsp Butter
1 Tbsp.serving Extra Virgin Olive Oil
12 oz Boneless, Skinless Chicken Breast,(diced) frozen
1 large whole (3" dia) Tomatoes, Red, Ripe(diced)
1/4 cup Traditional Feta Crumbled
1/2 cup Frozen chopped Spinach
1 1/2 cups Sliced Mushrooms
1 pepper to taste

Recipe Directions for Victoria's Weeknight Greek Pasta

  1. cook pasta acording to package Directions.

  2. Saute diced chicken breast meat in the olive oil and 1/2 Tbsp. of butter. with the Garlic just till cooked through.Add the Spinach and Mushrooms, cook till tender.

  3. add the ripe diced tomato, the drained pasta the remaining butter and saute for a min more, add the Feta and serve immediately. Enjoy!!
