Recipe Ingredients for victoria sponge with summer fruits

225 grams self raising flour
16 tablespoons splenda
225 grams light butter
4 large eggs
1 tablespoon vanilla extract
150 grams greek yogurt
150 grams strawberries
150 grams raspberries

Recipe Directions for victoria sponge with summer fruits

  1. mix flour, splenda, butter, eggs and vanilla in a blender until smooth, pour into two 21cm sandwich tins, cook for around 25mins - but keep checking

  2. when cooked and cooled spread the greek yoghurt over the top of one and place raspberries and sliced strawberries on top, sandwich and eh voila
