Victoria Sponge with Buttercream and Jam

Recipe Ingredients for Victoria Sponge

260 g butter
175 g caster sugar
3 eggs
175 g self-raising flour
175 g icing sugar
2 tbsp raspberry jam

Recipe Directions for Victoria Sponge

  1. Heat the oven to 180C. Butter two 20cm sandwich tins.

  2. Beat together the butter and sugar until the mixture looks pale and fluffy. Gradually add in the eggs, beating well each time, then fold in the flour. Divide the mixture between the two tins and bake for 25 minutes, or until firm. Cool in the tins for a minute, then remove and cool completely on a wire rack.

  3. To make the filling, beat the butter until creamy, then add the icing sugar in three lots, beating well each time. Add the vanilla essence and mix. Spread the flat side of one of the cold sponges with the jam. Spread the flat side of the the other with the buttercream. Place one sponge on top of the other, filling innermost, and press down gently. Dust the top with icing sugar.
