Recipe Ingredients for Vicki's Tortilla Soup

12 cups water
8 cups chicken
15 ounce corn
2 cups brown rice
1 onion
1/2 bell pepper
2 stalks celery
28 ounce tomatoes
2 squash, zucchini
4 cloves garlic
2 tbsp cumin
2 tbsp chili powder
2 tsp dried cilantro
2 tbsp olive oil

Recipe Directions for Vicki's Tortilla Soup

  1. De-bone approximately 2 pre-cooked whole chickens. Combine meat, tomatoes, and corn with 12 cups of water over medium heat and allow to come to a boil.

  2. Chop onion, celery, garlic, and bell pepper. In a skillet over medium heat, add olive oil and chopped vegetables. Once translucent, combine with chicken and other ingredients. When soup comes to a boil again, add rice. Reduce heat and cook 20 minutes. Add zucchini and cook an additional 10 minutes over low-medium heat. Serve with lime juice to taste.
