Recipe Ingredients for Vicki's Tiny Mini Meatloaf

1.13 lb extra lean ground beef (93/7)
1 cup plain bread crumbs
2 oz egg whites
6 oz tomato paste (no salt added)
1/2 cup diced bell pepper
1 cup minced carrots
1 cup chopped mushrooms
1 tsp thyme

Recipe Directions for Vicki's Tiny Mini Meatloaf

  1. mix all ingredients well

  2. Roll into small meatballs

  3. put in mini muffin pans sprayed with canola oil

  4. bake 350 degrees for 30 minutes or until done
