Per Vicki, tastes much better than it sounds. Tofu gives the soup a creamy texture without using cream. You can't taste the tofu but still get the benefit from eating tofu.

Recipe Ingredients for Vicki's Sweet Potato and Tofu Soup

1 tablespoon olive oil
1 tablespoon curry powder
1 tablespoon turmeric
1 small chopped sweet onion
3 oz carrots
5 pkg silken tofu
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium sweet potato
1 cup vegetable broth

Recipe Directions for Vicki's Sweet Potato and Tofu Soup

  1. In large sauce pan heat 1 tablespoon of olive oil. Add 1 tablespoon of curry powder and 1 tablespoon of turmeric. Simmer 30 seconds on medium heat.

  2. Add 1 small or 1/2 large chopped sweet onion and saute until onions clear.

  3. Add 1 peeled and chopped sweet potato, a handful of chopped carrots, a block of chopped tofu, salt and pepper to taste.

  4. Cover with organic chicken broth, or vegetable broth and simmer until veggies are soft.

  5. Place in food processor and blend until smooth.
