Gotta love cookie exchanges. This recipe is courtesy of one of my son's preschool teachers; each one is only 30 calories.

Recipe Ingredients for Vicki's Almond Cranberry Apricot Biscotti

1 3/4 cups flour
2 tsp baking powder
1/3 cup dried apricots, chopped
1/3 cup dried cranberries
1/3 cup almonds, sliced
2 eggs
3/4 cup sugar
1/4 cup butter, melted
2 1/2 tsp vanilla
1/2 tbsp orange rind, grated

Recipe Directions for Vicki's Almond Cranberry Apricot Biscotti

  1. Preheat oven to 350 degrees F.

  2. Mix flour and baking power together. Set aside.

  3. In a separate bowl, whisk together eggs, sugar, buttter, vanilla and orange rind. Add almonds, cranberries and apricots. Add flour mixture to wet mixture. The dough will be sticky.

  4. Transfer onto a lightly floured work surface. Divide dough into two pieces. Flour hands and roll one piece into a log almost the length of your cookie sheet. Place on cookie sheet and flatten to about 1/2 an inch. Repeat with other half of the dough. Both logs should fit lengthwise on sheet.

  5. Bake for 20 minutes. After removing from oven, let rest for 5 minutes. Lower oven temperature to 300 degrees.

  6. Transfer to cutting board and slice diagonally into 3/4" slices. Stand cookies on their side and return to oven for 10 minutes.

  7. Remove from oven, flip each biscotti over, and cook for another 10 minutes.

  8. Let cool on rack.
