Creamy-smooth, full-flavoured leek-and-potato soup is lovely served as a classic chilled vichyssoise in summer, or steaming hot in winter. The mellow base also adapts to many delicious variations using different vegetables

Recipe Ingredients for Vichyssoise (Leek & Potato Soup)

1/4 cup butter
3 cups leeks, chopped
1/2 cup onion, chopped
5 cups chicken stock
2 cups potatoes, diced
1 cup light cream
1 salt
1 pepper

Recipe Directions for Vichyssoise (Leek & Potato Soup)

  1. In large heavy saucepan, melt butter. Add leeks and onion; cook until soft, about 15 minutes (do not allow to brown).

  2. Add stock and potatoes. Cook for 20 to 30 minutes until potatoes are soft. Add salt and pepper to taste (use white pepper for pure white soups)

  3. In food processor or blender puree soup until very smooth. Add cream; taste and adjust seasoning.

  4. If serving chilled vichyssoise, refrigerate soup until extremely cold. Serve sprinkled with chopped chives. If serving hot, return to saucepan and heat slowly until steaming (do not boil); serve sprinkled with chopped chives or green onions.
