A rich, creamy soup, best served cold.

Recipe Ingredients for Vichysoisse

2 leeks
6 cups potatoes
8 cups water

Recipe Directions for Vichysoisse

  1. Chop 2 good size leeks (white part only)

  2. Sweat the leeks down until they are translucent.

  3. Peel and chop the potatoes (approximately 8 small potatoes)

  4. Cover them with water, and bring to a boil.

  5. Simmer until soft.

  6. Blend until creamy, regular blender or immersion blender.

  7. Serve with a dollop of either sour cream or a little soy milk (to keep it vegan) and some chopped chives.
