Salad packed with veggies. The basil dressing adds a wonderful kick.

Recipe Ingredients for Vibrant Veggie Salad

1 c. fresh basil leaves
1 1/2 T. balsamic vinegar
1 T. red wine vinegar
1 T. honey
3 garlic cloves
1 1/2 t. dijon mustard
6 T. olive oil
2 tomatoes
1 1/2 c. carrots
1 1/2 c. cooked beets
1 c. chick peas
1/2 c. red cabbage
1 c. feta
3 T. slivered almonds
3 T. sunflower seeds

Recipe Directions for Vibrant Veggie Salad

  1. Snip the basil finely and combine with vinegars, honey, crushed garlic, mustard, and olive oil.

  2. Boil beets until tender. Cool and remove skins, cut into matchsticks.

  3. Cut tomatoes into wedges.

  4. Finely shred carrots and cabbage.

  5. Toast the almonds and sunflower seeds.

  6. Combine all ingredients in a large bowl and serve immediately.
